Not sure if I'm using correct terminology here.

But I assume a domain that represents an industry could be called an industry domain? Feel free to laugh at me.

i.e. bricks.com.au

Are there any cases of people trademarking a name which represents an industry. Causing hassle for the domain holder.

How do domainers get around this?

Cheers

Pretty much any word can be trademarked if it relates to a different industry, eg an ice cream company called "Bricks". A phone company called "Orange". Trademarking a bricks company called "bricks" is going to be a near impossibility, and likely subject to people seeking to get it cancelled if ever were granted.
