I've just got my laptop + 1 monitor, then I have other laptops but would love to have 3 screens off one.

Yeah, you can just use a usb monitor adapter. You plug you monitor into it and then into your usb slot. The number of monitors are only limited by system resources. You can pick them up pretty cheap on ebay etc.
