I was just wondering if I need to have my domains registered with the same company I use for hosting? Or can I register in 1 place and change the name server to the hosting service??

Eg If Ventra IP had a end of year sale (hint hint Ventra IP), I could setup new hosting with Ventra, change to their name server straight away and gradually bring across my domains from the various places they are registered?

No you don't need to have them with the same company - it's often advisable to keep them separate. The domain, DNS, web hosting, and mail can all be with different providers if need be.
