I've had a .com.au site going for a few months now and it was ranking OK for Australian searches, but in the last week the site has been picked up by Yahoo and all of the sudden there has been an influx of traffic from the US that dwarfs the AU traffic.
Should I market the site towards US customers? Traffic is up around 500%

Why not? Always makes sense to target your natural traffic where possible.
Although I have found Tahoo & Bing traffic to be fairly volatile so don't go to too much effort as it may revert back in a week/month or two.

I'm a bit concerned if I change the site the ranking will go haha. Seriously though the bounce rate is 70% so if don't change it soon it will disappear soon enough.
I might wait a few weeks and just take the extra adsense for now I also have a suspicion the merchant is ripping me off, not one conversion in 5 months and a heap of traffic sent.
